Perfect texture in really mild pesto, which is ideal since the sea bass flavor is so mild on its own. Would buy this all the time if it wasn’t so ridiculously expensive. The leafy part of the pesto sticks to the edges of the can, so it’s good to scrape that first before mixing the sauce with the fish.

Should keep one of these around for nice occasions like other people keep champagne.
